Pure pekoe tea

Most people know the drink of tea as just that, tea. Most are surprised to find that there is a massive variety of types and sub-types of teas. The main types are Oolong, Black, White and Green tea. While these are all famous in a vast number of geographical locations, in the United States it is just plain tea.

The “plain” tea that United States citizens drink in ignorance on a daily basis is actually known as Pekoe tea. The average tea you get when you go shopping is not Pekoe in its’ purest form, but cut with additives, preservatives and other things to enhance the flavor and give it a longer shelf life. This tea is truly great, with a hearty roasted flavor, but once you have had Pekoe in its’ purest form, untainted by chemicals, then you will likely never go back.

The term, Pekoe, is derivative of the silverfish “fuzz” that collects on younger tealeaves as it is in the early post bloom stage. There is a vast variety of Pekoe teas, some stronger, some smoother. The blend varies depending upon the process of harvesting and preparation.

Being a black tea, Pekoe is allowed to go through an oxidation process far longer than any other type of tea, making it stronger, heartier, and less tart than most of the other genres.
