Most people know the drink of tea as just that, tea. Most are surprised to find that there is a massive variety of types and sub-types of teas. The main types are Oolong, Black, White and Green tea. The term, Pekoe, is derivative of the silverfish “fuzz” that collects on younger tealeaves as it is in the early post bloom stage. There is a vast variety of Pekoe teas, some stronger, some smoother. The blend varies depending upon the process of harvesting and preparation. Being a black tea, Pekoe is allowed to go through an oxidation process far longer than any other type of tea, making it stronger, heartier, and less tart than most of the other genres.
